Brown the half onion in a pot with olive oil and place the veal in it (30 minutes on one side and 30 minutes on the other). Pour in the white wine and cook for another 20 minutes, occasionally basting the meat with the cooking liquid. Add the honey, letting it dissolve in the cooking liquid, which you continue to baste on the meat to give it a glossy effect. Remove the meat from the heat and let it cool slightly. Blend the cooking liquid with a hand blender. Once cooled, slice the veal and place it in the pot with the liquid, cooking for about 10 minutes.
